Vegetable Chowder Recipe

4 cups diced potatoes
2 cups sliced carrots
1/2 cup butter
3 cups finely chopped onions
2 cups chopped celery
4 cups water
chicken boullion cubes or powder
to taste
For thicker cheesy version
3/4-1 cup flour
3 tsp salt
1/4 tsp pepper
4 cups milk
2 cups shredded cheddar cheese

Simmer 30 minutes or until done. Add broccoli, cauliflower, asparagus, or any veggies that is to your liking or preference. For thicker cheesy version, mix and add remaining ingredients after veggies are done. Pour in slowly, stirring constantly.
