8 eggs
1 1/2 c milk
1 c flour
3 T sugar
1 tsp vanilla
1/2 tsp salt
1/2 tsp cinnamon
1/4 lb butter
2 apples peeled and shredded, or applesauce or jam
3 T brown sugar

Directions:
Directions:
Preheat oven to 425º. Blend eggs, milk, flour, sugar, vanilla, salt, and cinnamon. Melt butter in 6 1-cup ramekins. Add apples or other fruit to ramekins. Return to oven until butter sizzles. Remove ramekins from oven and pour 3/4 c of batter over apples or other fruit into each. Sprinkle with brown sugar. Bake in the oven 20 - 30 minutes. Before serving sprinkle with powdered sugar and serve immediately. Offer warm syrup to top off the pancake.
