10 c. zucchini - ground course
4 c. onion - chopped fine
1 red pepper
1 green pepper
5 T. course salt
Let stand overnight. In a.m. drain - cover with cold water and drain again.
2 1/2 c. cider vinegar
6 c. sugar
1 T. nutmeg
1 tsp. dry mustard
1 T. tumeric
1T. cornstarch
2 tsp. celery seed
1/2 t. pepper

Cook 30 minutes. Seal in sterile jars.

Note: Use 3 T. cornstarch if using cucumber instead of zucchini.
