2 lbs chicken, boiled and cut into bite-size pieces
6 c chicken broth
1 large onion, chopped
2 tbs minced garlic
5 tbs olive oil
2 15 oz cans great northern beans
1 can chopped green chiles
1 tsp salt
1/2 tsp white pepper
1/4 tsp cumin
1/2 tbs fresh cilantro, chopped (optional)
3 tbs lime juice
grated Monterey jack cheese
fritos corn chips
diced fresh tomato (or fresh salsa)
sour cream

Directions:
Directions:
Boil chicken broth in large stockpot. In a skillet cook onion and garlic in olive oil until soft. Add to chicken broth, along with beans, chicken, chiles, and dried spices. Simmer for 30 minutes or until broth thickens. Add cilantro and lime juice and cook for 10 more minutes.
Serve topped with corn chips, shredded cheese, tomatoes, & sour cream.
