1 can black-eyed peas, drained
1 tbs chopped green onions
2 tbs minced garlic
2 green chili peppers, finely chopped
1 tbs white wine
1 tbs grated parmesan cheese
1 tbs grated sharp cheddar cheese
1 tbs grated mozzarella cheese
black pepper to taste or a touch of jalapeno juice for a spicier dip
pita bread, cut into triangles and toasted until crisp

Divide black-eyed peas. Mash 1/2 of the peas, reserving the other half. Add remaining ingredients and stir well. Add the reserved whole peas, mix lightly and place in a tightly covered container in refrigerator for several hours or overnight. Heat in a chafing dish or zap in the microwave for a minute or so. When it is warm & bubbly, serve with pita chips.
