1/2 lb thick slice bacon, coarsely chopped
2 1/2 lb russet potatoes, peeled
1 large onion
2 cups grated hot pepper Monterey Jack cheese

Directions:
Directions:
Preheat oven to 350º. Butter 13x9x2 glass baking dish. Cook chopped bacon in large skillet over medium heat until brown and crisp. Using slotted spoon, transfer bacon to paper towel and drain. Cut potatoe and onion into 1/2 inch pieces. Combine bacon, potatoes, and onion in prepared baking dish. Season with salt and pepper. Sprinkle Monterey Jack cheese over potatoes. Cover with aluminum foil. Bak until potatoes and onions are tender, about 1 hour. Remove foil and broil until top of potatoe mixture is brown and crisp, about 2 minutes.
