1 (8 lb.) bone-in turkey breast
3 tbsp. lemon juice, divided
2 tbsp, olive oil or canola oil, divided
1 tsp. minced garlic
1-1/4 tsp. salt
1 tbsp. lemon peel, grated
1 tsp. dried thyme
3/4 tsp. pepper
1/2 tsp. rubbed sage

Directions:
Directions:
Loosen skin from turkey with your fingers, leaving skin attached along bottom edges.

In a small bowl, combine 1 tbsp. lemon juice, 1 tbsp. oil, garlic, thyme, pepper and sage. Spread under skin of turkey. Combine remaining lemon juice and oil; set aside.

Place turkey on a rack in shallow baking pan. Bake uncovered at 350 for 3 hours, until meat thermometer reads 170. Baste every 1/2 hour with remaining lemon/oil mix.

Let cool for 10 minutes; discard skin and slice.
