Rice Poultry Dressing Recipe

Use with 12-16 lb. turkey.

1-1/2 cup long grain rice
3 cups chicken broth
6 tbsp. butter
2 medium onions,chopped
4 stalks celery, sliced
1 tsp. minced garlic
1/4 cup parsley, chopped
1 can (8 oz.) sliced mushrooms
1-1/2 tsp. poultry seasoning
1-1/2 tsp. lemon peel, grated
1/4 tsp. thyme
1/2 tsp. salt and pepper
1/3 cup sherry or cooking wine
2/3 cup almonds, sliced

Cook rice according to package directions. In large fry pan, melt butter; add onion and saute for 5 minutes. Add celery, garlic,parsley, mushrooms; cook 5 more minutes. Stir in poultry seasoning, lemon peel, pepper, salt, thyme. Combine vegetables with rice. Add wine and nuts; mix lightly.
