1 1/4 c quick cooking oatmeal
1 c plain yogurt
1 c low fat milk
1 tsp honey or sugar
1/4 c white flour
1/4 c whole wheat flour
1 tsp baking soda
1 tsp salt
2 large eggs, beaten
1/4 c chopped walnuts
1 T oil
1 tsp vanilla

Directions:

Combine all ingredients in a large bowl. Scoop approximately 1/4 cup of batter onto griddle for each pancake.

You can make the batter ahead. If it gets thick, add milk as necessary. This also makes a nice gift if you put the dry ingredients in a pint size jar with directions for adding the wet ingredients.
