1 lb ground beef
3/4 c chopped onion
3/4 c diced celery
1 24-oz can diced tomatoes
1 can white kidney beans
1 can red kidney beans
44 oz beef stock
8 oz dry pasta, Ditalini is the best, but can use small bow pasta
1 c shredded carrots

1 1/2 tsp Tabasco sauce
24 oz spaghetti sauce
Add Italian herbs to taste (3-4 T)

Directions:
Saute beef in a large 8-qt pot until beef starts to brown. Add onions, celery, and tomatoes and simmer for about 10 minutes. This cooks the onion - do not skip this step. Drain and rinse beans and add to the pot. Add beef stock. Simmer about 45 minutes. Cook pasta until al dente. Drain and add along with the carrots. Heat thoroughly to get the carrots hot, but not overcooked. Simply delicious!
