2 1/2 cups sliced zucchini (1/2-inch slices)
1 1/2 cups red and yellow pepper (1-inch squares)
1 cup green beans - 1-inch pieces
1 cup carrots - 1/2-inch slices
2 medium onions, quartered
4 cloves garlic
3 tbsp. balsamic vinegar
1 1/2 tbsp. olive oil
1/2 tsp. each basil, oregano, tarragon, thyme, parsley, rosemary
salt & pepper

Directions:
Preheat oven to 425º. Arrange vegetables in a 9x13 baking pan. Make sauce and pour over vegetables, coating well. Cover and bake for 40 minutes or longer, until vegetables are tender.
