3/4 C. Cornmeal (yellow)
1/4 C. Flour
2 Tsp. Salt
1 tsp. Cayenne
1/4 tsp. Garlic Powder
6 (4-6-oz) Catfish Fillets
1/4 tsp Salt
Oil

Directions:
Directions:
Combine first 5 items in large shallow pan. Sprinkle fish with salt and dredge in cornmeal mixture.
Pour oil in large cast iron skillet, 1 1/2 inches deep.
Fry fish in batches, 5-6 minutes on each side til golden brown and flakes when pricked by fork.
