2 c dried apricots
1 c white raisins
1 c rice

Directions:
Directions:
Sauté one large onion, with one chopped pepper. Add ˝ t curry powder
1 cup toasted chopped almonds
Cook rice, add with onion and pepper. Soak apricots and raisins for ˝ hr in warm water, cut apricots, add to cooked rice and vegetables, and add almonds right before serving to keep them crisp
