Ingredients: 8 oz grated Romano cheese 16 oz. dried bread crumbs 2 tbs salt 3/4 tbsp black peppers 2 1/2 tbsp garlic powder or 4 gloves minced garlic 3/4 c minced fresh parsley freshly grated rind of 4 lemons 12 whole artichokes 1/2 cup olive oil juice of 2 lemons (optional)

Directions:Mix together all of the above dry ingredients in a large bowl. Cut off ends (bottom & top) of each artichoke and spread the leaves apart with you fingers. Holding each artichoke over the bowl with the bread crumb mixture, sprinkle the mixture generously into the artichokes until the stuffing fills the spaces between each leaf. Using a bottle with small hole's bunch in the top, Sprinkle with olive oil mixed with the optional lemon juice over artichokes and into the stuffing to moisten thoroughly. Place the artichokes uprights on a rack or inverted plate above one-half to one inch water. cover the pan and cook over medium heat for about one hour and 15 minutes, testing for doyennes by pulling out leaves from close to the center. Serve warm or at room temperature,. |
