4 eggs
1 cup cooking oil
2 cups sugar
2 cups grated zucchini
2 tsp. vanilla
3/4 cup honey
3 cups flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 Tbsp. cinnamon
1 cup chopped nuts
1/4 cup coconut

Directions:
Directions:
Beat eggs until light and foamy. Add oil, sugar, zucchini, vanilla and honey; mix well.

Sift together the flour, salt, baking powder, baking soda and cinnamon. Add to zucchini mixture and mix well. Fold in nuts and coconut.

Pour batter into 2 greased, 9x5" loaf pans. Bake at 325º for 1 hour, or until a toothpick inserted in center comes out clean. Invert on a wire rack to cool. Makes 2 loaves.
