1 cup blueberries
1 tsp. grated lemon rind
2 Tbsp. sugar
1 3/4 cups all-purpose flour
1/2 cup sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 egg, beaten
3/4 cup milk
1/3 cup vegetable oil

Directions:
Directions:
Mix blueberries and lemon rind with 2 Tbsp. sugar and set aside. Combine flour, 1/2 cup sugar, baking powder and salt. Beat egg with fork and add milk and oil. Stir into flour mixture just enough to moisten - a few lumps are ok. Gently fold in blueberries and lemon rind. Fill greased muffin tins full. Bake for 25 minutes at 400º.
