2 lbs. Small Red Potatoes
1/2 C. Red Onion (chopped)
1/2 C. Green Onions (sliced)
1/4 C. Parsley (minced)
6 Tsp. Cider Vinegar (divided in 1/2)
1 lb. Smoked Kielbasa or Cajun Sausage
(pre-cooked & sliced)
6 Tsp. Olive Oil
1 Tsp. Dijon Mustard
2 Garlic Cloves (minced)
1/4 - 1/2 tsp. Cayenne Pepper (if desired)
Salt & Pepper to taste

Cook the potatoes in salted water til done. Drain.
Rinse and cool completely. Cut into 1/4" slices., place in large bowl.
Add onions, parsley and 3 Tsp. of vinegar & toss.
Once you've cooked, cooled and sliced sausage,
add to mixture.
To drippings in skillet from meat, add mustard, garlic, salt, pepper cayenne if used with the rest of vinegar and bring to a boil. Pour over salad and toss once more.
