1 egg
3/4 cup milk
1/4 cup cooking oil
1 tbsp. lemon juice
1 3/4 cups all-purpose flour
3/4 cup sugar
2 tsp. baking powder
2 tsp. finely shredded lemon peel
1/2 tsp. salt

Directions:
Directions:
In mixing bowl beat together egg, milk, cooking oil and lemon juice. Stir together flour, sugar, baking powder, lemon peel and salt. Add to egg mixture stirring just till moistened. Pour into 2 greased 6x3x2-inch loaf pans. Bake in 350 oven for 40 to 45 minutes or till bread tests done. Cool in pans 10 minutes. Remove from pans onto wire rack. Cool completely. Wrap and store overnight. Makes 2 small loaves.
