3 medium ripe avocados
2 Tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1 cup sour cream
1/2 cup mayonnaise
1 package taco seasoning mix
2 cans jalapeņo bean dip (El Paso brand best)
1 large bunch green onions chopped (1 cup)
2 cups tomatoes, seeded and chopped
2 cans (3 1/2 oz.) chopped ripe olives
1 package (8 oz.) cheddar cheese, shredded

Directions:
Directions:
Peel, pit and mash avocado with lemon juice, salt and pepper.

Combine sour cream, mayo and taco seasoning mix in bowl and mix together.

To assemble: Spread bean dip on bottom of large serving platter. Top with avocado mixture. Layer on sour cream taco mixture. Sprinkle with onions, tomatoes, ripe olives and cover with shredded cheese.
