2 squares unsweetened chocolate
2 cups flour
1 tsp. cinnamon
1/2 cup shortening
1/4 tsp. salt
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 tbsp. instant coffee crystals
1 tsp. water
1 egg
1 1/2 cups chocolate chips
3 tbsp. shortening

Directions:

Melt unsweetened chocolate in microwave. Sift together flour, cinnamon and salt. In mixing bowl, beat 1/2 cup shortening, butter, sugar and brown sugar together until fluffy. Dissolve coffee crystals in water. Add coffee, melted chocolate and egg to cream/sugar mixture and beat well. Add flour mixture and beat until well mixed. Cover and chill one hour, then shape into 2 7-inch rolls. Wrap and chill at least 6 hours or overnight.

Cut into 1/4-inch slices. Place on ungreased cookie sheet. Bake at 350° for 10-12 minutes. Remove and cool. Melt together chocolate chips and remaining shortening. Dip 1/2 of each cookie in chocolate mixture. Place on wax paper to cool until chocolate is set.
