13-oz. can evaporated milk
1 pkg. lemon Jello
1 1/4 cups boiling water
1/2 cup sugar
1/8 tsp. salt
3 tbsp. lemon juice
grated rind of 1 lemon
2 1/2 cups vanilla cookie crumbs

Directions:
Directions:
Thoroughly chill evaporated milk overnight. Dissolve Jello in boiling water, add sugar, salt, lemon juice and lemon rind. When cooled slightly, beat milk until stiff and mix gelatin mixture with it. Spread half of the cookie crumbs in bottom of 9-inch square pan, pour in lemon mixture. Top with remaining crumbs. Chill at least 3 hours.
