pickling spice

Directions:
Directions:
Wash beets, boil until somewhat tender, cut tops off and peel skin off, (skin should slide off easy).
Mix equal parts Apple Cider vinegar and sugar and bring to a boil. (Add about 1 cup of liquid from beets boiling to give the syrup the red color.)
Place beets in jars, leave 1/2 inch head room, feel jars with syrup. Seal jars.
