1 box canning tomatoes, 4 large zucchini, 1 bag large sweet onions, 4 bunches celery


Pickling Spices/per jar: Pinch Italian Seasoning, 1/2 tsp salt, 1/4 tsp black peppercorns, 2-3 drops Tobasco, 1/2 tsp sugar, sprig of fresh oregano, 2 cloves fresh garlic

Clean and prepare vegetables into equal size chunks. Put spices in each jar, pack vegetables alternating layers until about 1 1/2" of the top. Ad boiling water to fill jars. Wipe rims, seal with lids.
Water bath for about 1 hour until liquid in jars is boiling.

Peel tomatoes by putting in boiling water for 1-2 minutes then plunge in ice bath. Remove seeds from zucchini.
