1 Rotisserie Chicken
1/2 lb. Mushrooms, Cleaned and Sliced
1 Stick Butter
1/2 c. Flour
2 c. Chicken Broth
2 c. Light Cream
Salt and Pepper to Taste
Stuffed Green Olives, Sliced or 1 Jar Pimientos, Chopped
1/3 c. Sherry

Directions:
Remove all meat from chicken carcass. Set aside. Melt butter in dutch oven. Saute mushrooms. Remove mushrooms from pan, add flour, and make a light brown roux. Add chicken broth, stirring to remove lumps. Continue stirring and add cream. Bring to a boil and turn heat to low. Continue stirring and cooking for about 15 minutes. Add chicken, mushrooms, sliced olives or pimientos. Add sherry just before serving. Serve on homemade biscuits or puffed pastry shells.
