White Chili Recipe

1 tbsp. olive oil
2 lbs. chicken breast, cubed
1/4 cup onion, chopped
1 can (10-3/4 oz.) chicken broth
1 can (4 oz.) green chilies, drained, chopped
1 tsp. minced garlic
1 tsp. cumin
1/2 tsp. oregano
1/2 tsp. cilantro leaves
1/8 tsp. ground red pepper
1 can (19 oz.) white kidney beans, do not drain
(can substitute navy beans)
1/2 cup green onion, chopped
1/2 cup cheddar cheese, shredded
sour cream

In a large sauce pan, heat oil; add chicken and onions. Cook 5 minutes. Add broth, chilies and spices; simmer 15 minutes. Stir in beans; simmer 5 minutes. Put in serving bowls. Garnish with green onions, cheddar cheese and sour cream.
