1/2 to 3/4 cup shortening
1 3/4 cup all-purpose flour
1 cup mashed bananas
1/2 cup sour milk, (to make sour milk, mix 1 tsp white vinegar to 1/2 cup milk)
1 cup sugar
2 eggs, separated
2 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla

Cream cheese frosting:

1 8 oz pkg cream cheese
1 stick butter
2 tsp vanilla or almond extract
1 box powdered sugar

Directions:
Directions:
Cream shortening and sugar. Add vanilla, egg yolks and salt. Beat well. Add flour, sifted with baking powder and soda, alternately with sour milk. Add the mashed bananas. Beat the egg whites to stiff peaks and fold into batter. Bake 30 minutes at 375. Frost with cream cheese frosting.

For variation. Bake in 2 round cake pans. Make a mixture of powdered sugar and 1 mashed banana and put between layers of cake. Whip 1/2 pint of whipping cream. Add vanilla and powdered sugar to sweeten. Frost on top of cake and sprinkle fine chopped nuts. Refrigerate until ready to serve.
