2/3 cup bisquick mix
1/4 cup Parmesan cheese
2 eggs
2 cups grated zucchini
1 small chopped onion
salt and pepper
Directions:
Directions:
Combine the above ingredients and drop by spoonfuls into a heavy skillet containing a thin layer of hot oil. Spread out and flatten as you turn them with a spatula. Fry until golden brown on both sides.
