1/4 c. butter or margarine
1/4 c. all-purpose flour
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. dry mustard
1/4 tsp. Worcestershire sauce
1 c. milk
1/2 c. beer (optional)
2 c. shredded Cheddar cheese
bread for toast

Directions:
Directions:
Melt butter in medium saucepan over low heat. Blend in flour and seasonings. Cook over low heat stirring until mixture is smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Gradually add beer to sauce mixture. Stir in cheese; heat over low heat, stirring constantly, until cheese is melted. Serve over toast. Garnish with paprika, if desired.

We love to use this recipe as a cheese fondu. Instead of spreading on toast, dip a variety of breads and vegetables in it. (i.e. granny smith apples, pumpernickel bread, carrots, broccoli, cauliflower)
