1 cup yellow cornmeal
3/4 cup sifted flour
2 tbsp. sugar
1/2 tsp. salt
3 tsp. baking powder
1 egg
1 cup milk
2 tbsp. oil

Directions:
Directions:
Sift all dry ingredients into bowl. Add egg, milk and oil. Beat until smooth. In an iron skillet, heat a little butter. Add mixture to skillet and bake in 425º oven for about 20 minutes or until golden.

You can use this cornbread recipe for the cornbread dressing you make for Thanksgiving!

Also (and this is mentioned elsewhere in this cookbook) it's best to cook cornbread in a pre-heated cast iron skillet with a little melted butter.
