1 can black eyed peas
1 can black beans
1 large can shoepeg corn
1 can copped green chili
'1 jar chopped pimentos (optional)
4 stalks celery
1 large red onion

Marinade
1 cup olive oil
1 cup sugar
1/2 cup apple cider vinegar

Directions:

Heat marinade until sugar dissolves and cool
Pour marinade over bean mixture and refrigerte overnight. Drain off marinade and keep in covered container. good up to 3 weeks
Serve with Frito Scoops
