1 lb. Lean Pork Roast (cubed)
2 Tsp.Olive Oil
3 Onions (chopped)
1 Green Pepper (diced)
2 Garlic Cloves (minced)
2 Qt. Beef Stock
1 lb. Ham (diced)
1 tsp. Chili Powder
Salt & Pepper to taste
6 Anduille Sausages (1" pcs.)
1/4 C. Parsley
2 C. Rice
1/8 tsp. Cayenne Pepper

Directions:
Directions:
In Dutch Oven, saute pork,onions,pepper, garlic & parsley
in olive oil til slightly browned.
Stir in ham,chili powder, cayenne pepper , salt & pepper.
Add sausage and beef stock, then bring to boil.
Rice is then added and all is simmered til rice is done.
