1 medium butternut squash
1/2 cup balsamic vinegar
2 T water
1/2 tsp salt
1/2 tsp ground pepper
2 T chopped mint (optional)

Directions:

Peel skin from squash and cut it in half, remove strings and seeds, cut the squash into medium dice. In a saute pan, place balsamic vinegar and water, add the squash and cook with medium heat until done, if the pieces are bite size this cooks quickly, add salt and pepper...........toss with mint and servie
