1 cup fresh or frozen corn
1 cup diced carrots
1 cup diced celery
1 cup diced red bell pepper
1 1/2 tsp minced red onion
1/4 cup rice vinegar
1/2 cup cilantro leaves
salt and pepper

Blanch corn, carrots for 1 minute, drain and cool, Combine peas, corn, carrots, celery, red pepper, and onion, pour vinegar over, toss well, sprinkle with salt and pepper, allow to stand 30 min, toss with cilantro, keep cool
