1-1/2 cups oat bran
1/2 cup all-purpose flour
2 tsp. baking powder
1 tsp. pumpkin pie spice
1/4 tsp. salt
1 cup canned or fresh mashed cooked pumpkin
2/3 cup firmly packed brown sugar
1/2 cup skim milk
2 egg whites
2 tbsp. canola, corn, safflower or sunflower oil

Preheat oven to 425º. Grease well 12 (2-1/2") muffin cups or line with paper baking cups. In large bowl, mix oat bran, flour, baking powder, pumpkin pie spice, and salt.

In separate bowl, blend pumpkin, brown sugar, skim milk, egg whites and oil. Add to oat bran/flour mixture all at once, stirring until dry ingredients are moistened. Spoon into prepared muffin cups.

Bake at 425º for 18-20 minutes, or until muffins are firm to touch.
