1 lb boneless, skinless chicken, cut into strips
1 medium onion, sliced and separated
1 ½ cups frozen baby carrots
1 can whole potatoes, drained
½ cup butter or margarine, thawed
1 cup whipping cream
1 Tablespoon dried parsley
½ teaspoon salt
¼ teaspoon pepper
Egg Noodles

Directions:
Directions:
In a large skillet, cook chicken, onion, and carrots in butter until chicken is lightly browned. Add potatoes. Cover and cook over medium heat for 10 minutes or until carrots are tender. Add the cream, parsley, salt, and pepper. Reduce heat. Simmer, uncovered, for 10 minutes or until slightly thickened.

Serve over egg noodles.

[Can use 2 Tablespoons butter and ¼ cup olive oil to cook chicken, onion, and carrots instead = healthier.]
