6 skinless boneless half chicken breasts, or 8 oz baked tofu
1/4 cup white wine
1 tbsp chopped fresh tarragon
1 1/2 heads green leaf lettuce or Boston lettuce
1/2 cup grated carrots
1/2 cup shredded cabbage
14 oz canned artichoke hearts or 6 hearts of palm (in water, not marinade or oil) drained and sliced.
3 tomatoes, diced
1/2 cup pineapples or 1/2 cup grapes
Cobb Salad Dressing
3 tbsp minced shallots
1 tsp honey
1/4 cup freshly squeezed lemon zest or vinaigrette
1 tbsp balsamic vinegar
1/4 cup red wine vinegar
1/4 cup olive oil
1/2 tsp minced garlic and pepper to taste.

Preheat oven to 400ºF.
Lay the chicken breasts in a baking pan and pour in the wine. Sprinkle tarragon over chicken and bake for 20 minutes. Remove from oven and let cool. Cube the chicken.
Break the endive leaves off the head by trimming the root and separating leaves. Fan 6 endive leaves on each of 6 plates creating a "star" look.
Mix together lettuce, carrots, and cabbage and put equal portions around the inside of the endive leaves on each plate; create separate piles of equal portions of the artichoke hearts, hard boiled eggs, avocado, and tomatoes, around chicken.
Cobb Salad Dressing
Whisk the dressing ingredients together in a small bowl. Drizzle some of the dressing over each salad and serve.
