1 large egg, whole, raw
1/2 cup brown sugar
2 tsp vanilla extract
1 tsp baking powder
1/8 cup agave nectar
3/4 cup applesauce, unsweetened
1 cup flour, whole wheat, pastry
1 cup flour, white whole wheat
1 cup oats, rolled, dry
2 tsp sugar, cinnamon
1/2 cup chopped walnuts, English
1/4 cup vegetable oil-butter spread, tub, salted
1 cup chocolate chips, semisweet pieces

Directions:

Preheat oven to 350ºF.

In a small bowl stir applesauce, vanilla, sugar, egg and agave nectar. Melt spectrum spread slightly, add and stir.

Sift together flour, baking powder, and cinnamon.

Stir into apple mixture, add oats until combined, then nuts and chips.

Drop by rounded spoonfuls onto cookie sheet. Bake 10-12 minutes, cool on rack.
