3 tbsp tapioca, dry, quick cooking
1 1/4 cup honey
3 egg whites
2 cups milk, fat free
2 large peaches, raw
1/4 tsp ginger, ground
1 tsp cinnamon, ground

Directions:
Directions:
Combine tapioca, 2 tbsp honey, egg whites, and milk in medium saucepan and whisk briefly. Let stand for 4-5 minutes. Cook over medium heat, stirring until mixture comes to a boil.

Transfer to medium bowl set over ice water. Let stand to cool 10-12 minutes. Refrigerate pudding for at least one hour or up to one day prior to serving.

Add remaining honey to peach wedges and coat thoroughly in a bowl. Heat grilling pan or saute pan over medium heat. Sprinkle with ginger. Cook until peaches are tender, approx. 3 minutes.
Divide pudding among 4 dishes and spoon peaches on top. Place spring of mint on top, optional.

Top each dessert with mint sprig, if desired. Peaches can be coated with honey and grilled to serve with or without tapioca.
