6 oz Parmesan, in 1 piece
1 tbsp cornmeal
1/4-1/2 cup shelled pistachios, finely chopped
1/4-1/2 tsp black pepper
1/8 tsp ground red pepper

Directions:
Directions:
Heat oven to 350ºF. Shred Parmesan using a fine grater. Mix Parmesan, cornmeal, pistachios and peppers in a bowl. Line 2 large baking sheets with foil. Coat with nonstick cooking spray.

For each crisp, spoon level tablespoon of the mixture, scooping from the bottom of the bowl, into a mound, 6 per sheet. Spread each mound slightly to form 3 inch circle, 1/2 inch apart.

Bake at 350ºF for 8-10 minutes until browned.
