1 can (15 oz) peas, black-eyed, canned, rinsed, drained
3 slices turkey breast meat
3 tbsp vinegar, balsamic
1/6 cup cilantro, raw
2 tbsp onions, raw
2 oz cheese, Colby jack, reduced fat
1/2 can (8 oz) Mandarin oranges, canned
4 almonds, dry roasted

Directions:
Directions:
Dice tomato and onion and place into mixing bowl. Drain and rinse black-eyed peas and add to bowl. Add shredded cheese, chopped almonds, vinegar, chopped cilantro, and toss to mix well. Slice turkey breast meat into strips and add, as well as Mandarin oranges. Mix thoroughly and serve cold.
