1 box Barilla Manicotti
1 lb. Ground Beef
1/2 c. Parmigianino Reggiano Cheese
3 Eggs
1 onion, diced
2 heaping Tbls. ricotta cheese
1 c. Italian bread crumbs
1 jar your favorite tomato sauce
1/2 c. mozzarella cheese
Olive Oil
Salt
Garlic powder
Dried basil
Pepper

Directions:
Directions:
Bring a large pot of water to a boil and add 2 tablespoons salt. Cook manicotti according to the package directions.

In a skillet, sweat the onions in a little olive oil until they are clear. Add the ground beef, brown and drain. Season with garlic powder, dried basil, salt and pepper as desired. Allow meat mixture to cool slightly so it is easy to handle.

In a large bowl, combine eggs, breadcrumbs, meat, and Parmesan and ricotta cheeses. Carefully stuff the manicotti shells with the meat mixture.

Put a little tomato sauce in the bottom of a baking dish, then place the stuffed manicotti in the dish. Top with the rest of the sauce and sprinkle with mozzarella cheese.

Bake at 350ºfor 30 minutes.

This is a recipe from Barilla that I've doctored up a bit. My husband isn't a huge ricotta fan, so this recipe is a good compromise for us.
