2 Pie Crusts
36 Buttery Crackers (Ritz or round Town house)
2 C. Water and Sugar
2 tsp. Cream of Tarter
2 Tsp. Lemon Juice
1/4 tsp. Lemon Peel (grated)
1/4 C.Butter (lumps)
Cinnamon & Nutmeg to taste

Directions:
Directions:
Break crackers coarsely and place in unbaked pie crust.
Mix water, sugar and cream of tarter bring to hard boil for 15 minutes. Then add lemon juice & peel. Pour hot liquid over crackers in crust.
Generously dot with chunks of butter and sprinkle with cinnamon and sugar to taste.
Cover with top crust. Slice small opening in top crust to allow steam to escape. Dust lightly with sugar on top crust.
Bake at 425º for 30 minutes.
