2 Eggs(large)
1/4 C. Flour
1/4 tsp. Salt
1/2 tsp. Sugar
2 C. Corn Kernals (fresh)
1/8 tsp. Pepper
2-3 Tsp. Oil

Directions:
Directions:
Seperate eggs,set aside whites. Warm to room temp.
In medium bowl, mix yolks, corn, flour, salt & pepper.
Mix well.
By hand beat egg whites til fluffy. Add sugar & beat to peaks.
Fold into corn mixture.
In large iron skillet, heat 1 Tsp. oil, spoon in batter in 2x3 ovals.
Fry as many as will fit in skillet. Turn when golden brown.
Add more oil as needed.

This recipes was used in the mid 1800's, whenever seafood was not plentiful as the appearance resembled oysters.
