1 large stewing chicken
1 large onion, quartered
1 1/2 tsp salt
1/2 cup flour
2 cans (4 oz.) sliced mushrooms
1 cup evaporated milk
1 tsp. salt
1/2 tsp. turmeric
1/2 tsp. oregano
1 cup rice
2 1/2 cups boiling water
1 1/2 tsp salt
1 tbsp. butter
1/2 cup chopped green onions
1/2 cup shredded cheddar cheese
1/8 tsp. black pepper

Directions:
Directions:
Boil chicken until tender in water to cover with onion and 1 1/2 tsp salt added. Cool chicken, reserving broth. Remove skin and cut chicken meat into small pieces. Melt chicken fat in saucepan. Stir in flour; add 4 cups liquid (chicken broth and juice from the mushrooms) and evaporated milk. Cook and stir until sauce is thick and smooth. Add 1 tsp. salt, pepper, turmeric, and oregano.

Combine rice with boiling water; add 1 1/2 teaspoons of salt and butter. Cover and bake in oven at 400 degrees for 30 minutes, or until rice is tender.

Spread rice in bottom of a large casserole dish. Top with chicken, then green onions, sauce, mushrooms, and cheese. Bake in a moderate oven at 350 degrees for 30 minutes.

There really is not mustard in this casserole. Scott named it this when he was small because of its bright yellow color. The name stuck over the years
