1 3/4 c flour
1/2 t salt
1 stick butter (room temp/soft)
4 eggs
1 1/4 c dried cranberries (craisins)
1/2 t baking powder
1 1/2 c sugar
3 cups whole pecan halves
1 t vanilla
1/2 c plain store bought bread crumbs-any brand

Adjust oven rack 1/3 from bottom
Preheat oven to 350º
Spray 3 loaf pans with Pam and dust with bread crumbs shaking off the excess
In mixer mix butter until soft
Add vanilla, sugar and eggs one at a time
Add flour, baking powder, and salt and mix well
Stir in nuts and berries
Divide batter into 3 loaf pans
Bake for 55' reversing ends at 30'
Toothpick should come out clean
Remove from oven and cover with a damp paper towel to cool
Remove from pans and wrap in saran wrap
Put in refrigerator overnite
Slice into thin slices and toast on cookie sheets about 15-20 minutes in a 350 degree oven until light brown
Watch carefully so as not to over brown
Cool and store in airtight containers
