7 cups cubed (1/2 inch pieces) whole wheat bread (11 oz)
1 tbsp canola oil
1 3/4 cups chopped onion
1 1/2 cups celery, chopped
2 cups diced and peeled apples, Granny Smith or Cortland
1/3 cups pecans or walnuts, coarsely chopped
1 cup apple cider or pear nectar
2/3 cup dried cranberries or cherries
1 1/2 cups low sodium chicken or vegetable broth
2 large eggs, lightly beaten (or 1/2 cup egg substitute)
1/3 cup fresh parsley, chopped or 1 tbsp dried
1 tbsp dried thyme
Freshly ground pepper to taste

Preheat oven to 275ºF. Spread bread on a baking sheet. Bake until crisp, 30 to 35 minutes.

Heat oil in a large skillet over medium-high heat. Add onion, celery and apples, cook until tender and lightly browned, 11 to 12 minutes.

Add apple cider or pear nectar and dried cranberries or cherries, cook until most of liquid has evaporated, 5 to 6 minutes and remove from heat.

Increase oven temperature to 375ºF. Coat an 8x8 inch or 2 1/2 qt baking dish with cooking spray. Combine bread, nuts, onion mixture, broth, eggs or substitute, parsley, thyme and pepper, mix well. Spoon into baking dish and cover with foil, bake 30 to 35 minutes.
Remove foil and bake additional 15 minutes to brown top.
