18 large mushrooms or 5 Portabella
1 tsp olive oil
1/4 cup minced onion
2 cloves garlic, minced or 1/2 tsp bottled minced garlic
1/2 cup zucchini, chopped or shredded
1/4 cup finely chopped walnuts
1/8 cup whole wheat panko
1 1/2 tbsp grated Parmesan cheese
1/2 tsp herb seasoning (salt-free)
Freshly ground pepper to taste
1 tsp paprika

Preheat oven to 350ºF.
Cut and discard a thin slice from end of each mushroom. Remove and chop stems.
Heat a skillet over medium-high heat. Add oil and add chopped mushroom stems, onion, zucchini, walnuts, and garlic. Saute until onion is tender, 6-7 minutes. Remove from heat and stir in remaining ingredients saving the paprika to sprinkle tops.

Spoon stuffing into mushrooms and arrange in a shallow baking dish. Sprinkle with paprika and bake for 20-25 minutes, or until tender.
