4 sweet potatoes
3 tsp olive oil
1/2 tbsp minced canned chipotle chile
1 tsp maple syrup
1 tbsp chili powder
2 large tuna steaks
1 tbsp sesame seeds
1 1/2 lbs sugar snap peas

Directions:
Directions:
Bake sweet potatoes in 350º oven for 50 minutes; cool. Peel and cut into wedges. Mix oil and chipotle; stir in maple syrup and 1/4 teaspoon salt. Brush onto potatoes and return to oven.
Combine chili powder and remaining salt; sprinkle onto tuna steaks. Grill or bake tuna.
Steam snap peas until crisp.
Sprinkle sesame seeds over snap peas and fish. Enjoy!
