4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
2 tsp. seasoning salt
6 slices bacon, cut in half
1/2 c. prepared mustard
1/2 c. honey
1/4 c. light corn syrup
1/4 c. mayonnaise
1 T. dried onion flakes
1 T. vegetable oil
1 c. sliced fresh mushrooms
2 c. shredded Colby-Monterey Jack cheese
2T. chopped fresh parsley

Directions:

1. Rub chicken breasts with seasoning salt, cover & refrigerate for 30 min.
2. Preheat oven to 350 degrees. Place bacon in a large, deep skillet. Cook over med. high heat until crisp. Set aside.
3. In med. bowl, combine mustard, honey, corn syrup, mayonnaise & dried onion flakes. Remove half of sauce, cover & refrigerate to serve later.
4. Heat oil in large skillet over med. heat. Place breasts in skillet & saute for 3-5 minutes per side, or until browned. Remove from skillet & place breasts in 9x13 baking dish. Apply honey mustard sauce to each breast, then layer each breast with mushrooms & bacon. Sprinkle top with shredded cheese.
5. Bake for 15 minutes or until cheese is melted & chicken juice runs clear. Garnish with parsley & serve with reserved mustard sauce.

This recipe takes a little time to prepare but is well worth it. It's a great main course to serve for small dinner parties.
