1/3 cup red wine vinegar
1/3 cup salad oil (I use evoo)
1 small sweet onion, thinly sliced into rings
1 teaspoon salt (I use 1/2 teaspoon sea salt)
2 teaspoons dried parsley flakes
1 teaspoon prepared mustard
1 tablespoon brown sugar
2-6 ounce cans of drained mushroom caps.

In a small saucepan combine first seven ingredients. Bring to a boil, remove from heat, then add mushroom caps. Chill in covered container overnight. Drain and serve.
